Simple Roasted Radishes with Brown Butter, Lemon, and Radish Tops


·2 bunches medium radishes
·1 and 1/2 tablespoons olive oil
·Sea salt
·2 tablespoons unsalted butter
·1 teaspoon fresh lemon juice


Preheat oven to 450°F. Brush a large baking sheet with olive oil. Cut off all but ½” of radish tops; reserve trimmed tops and rinse them well, checking for grit. Coarsely chop radish tops and set aside. Slice radishes in half lengthwise and place in a bowl. Add olive oil and toss to coat. Place radishes cut side down, on the prepared baking sheet; sprinkle lightly with sea salt. Roast for about 18 minutes, or until crisp-tender, tossing occasionally. Season to taste. Melt butter in a skillet over medium-high heat. Add a pinch of salt and cook for 3 minutes, or until butter browns, swirling frequently to keep from burning. Remove skillet from heat and stir in fresh lemon juice. Transfer roasted radishes to a serving bowl and drizzle the brown butter on top. Sprinkle with chopped radish tops, then serve and enjoy!
